Cafe Delas was first set up in in Brazil in partnership with the International Womens’ Coffee Alliance, and sources coffee from women run farms in Brazil, Guatemala and now Mexico. By involving women directly in the coffee business, Cafe Delas helps to improve participation, visibility, and economic control for women in coffee producing areas.
This regional lot comes from La Concordia in the Chiapas state in the south of Mexico. The cooperative members grow different cultivars, especially those hybridized from the disease resistant Catimor, but a core part of the cherry delivered for processing is Typica and Pluma Hidalgo (a traditional cross between Typica and Bourbon), giving elaborate spice and sweetness.
Despite the large number of producer members, Cafe Delas selects the ripest coffee cherry, with strict fermentation controls. Cherry is first mechanically depulped and fermented in water for 12-17 hours, washed and then carefully dried on verandas.
Toasty roasted nuts give way to iced tea and stonefruit sweetness. This coffee was purchased as the backbone component for our BFG blend, where it gives great body, and we love how well this coffee cuts through milk.
