Mausi and Eddy are both descendants of German coffee farmers, and run an eco-lodge La Hammonia. Their farm engages in best practices to ensure that their coffees are all grown organically, under shade, with full lot traceability – farm location, altitude & varietal – their nuresery grows seedlings of at least a dozen varieties, including the new Masellaza.
The eco-lodge is more like an eco-village, with organic farming of livestock and all vegetables used at their restaurant, this farming operation helps to support those who live on the estate.
Matagalpa is renowned for very sweet savoury cups; after some opening peanut brittle, this washed caturra/catuai mix produces layers of cherry, citrus & vanilla.
