This Bitoya lot is produced by 650-800 smallholder producers around the Tebe Haru Wachu village. Fresh ripe cherry is grown and picked, before being processed at Bisrat Melaku’s wet mill in Uraga. This is a classic washed coffee, but the wet fermentation time is long – 36-48 hours, and we find this emphasises the soft sweetness of this high-grown Ethiopian landrace coffee. Expect hard candy sweetness and mouthfeel, with complex wild berries, and cooked stonefruit.
